- 4 ÄûÃʵ¼º½ Weet-Bixâ„¢ crushed
- 1 1/2 cup wholemeal self-raising flour
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 425g can pink lady apple, drained & diced
- 2 eggs, lightly beaten
- 1/3 cup vegetable oil
- 1 cup So Goodâ„¢ Almond Milk

Step 1
Place 3 crushed Weet-Bixâ„¢, flour, sugar, cinnamon and apple in a large mixing bowl.Step 2
Combine egg, oil and almond milk in a separate bowl.Step 3
Fold liquid ingredients gently into dry ingredients until just combined.Step 4
Spoon mixture into lightly greased 12 hole muffin tray and sprinkle with the remaining one crushed Weet-Bixâ„¢.Step 5
Bake in a moderate oven, 180°C, for 30 minutes or until golden.
Tips
- Use 3/4 cup wholemeal self-raising flour and 3/4 cup white self-raising flour for a lighter result.
